Beyond Burgers a la Sneha!

Now that the weather has been warming up again, we've been grilling out more. One of our favorites is the Beyond Burgers. We usually put everything on the grill; even the fries! We've tried many different types of vegetarian burgers and I think the Beyond Meat patty has definitely been the winner for us. We absolutely loved it! While the patty itself doesn't have much flavor in it, I think the texture and toppings is what makes this burger amazing. It's pretty versatile that you can dress it up in many different ways and it'd be delicious! I usually make it with my own aioli sauce and I've used the Delish Bajan Hot Pepper Sauce that have added a lot of flavor. But if you don't have that sauce, I've also used Yellowbird's Habanero sauce that went great with it too. I especially love the fried egg on top; the egg yolk really brings the entire dish together and taste amazing. Also, you can make these as open face burgers on a slice of bread as well to cut out some of bread.
Beyond Burger a la Sneha
Ingredients:
- 2 Beyond Meat burger patties
- 2 eggs
- 1/2 red onion sliced
- 1/2 bell pepper sliced
- 2 serrano peppers sliced
- 2 leaves of romaine or iceberg lettuce
- 1 vine tomatoes sliced
- pickles slices
- 3 tbsp of Hienz mayonnaise
- 1/2 tsp of Thai chili and garlic paste
- 1 tsp of honey
- 1/2 tbsp of minced chives
- 1/2 tsp of red pepper flakes
- 1/2 tbsp of Delish Bajan hot pepper sauce or Yellowbird's habanero sauce
- Salt and pepper to taste
- 2 onion buns or sliced bread (lightly buttered)
- 2 slices of Kraft pepper jack cheese
- 1 tsp of EVOO

Note: I prefer to grill everything, but if that's not possible you can certainly use a griddle, or cook everything on a skillet. I've made these on the grill, griddle, and on the skillet, and they turned out perfect.
Directions:
1 - Coat the sliced onions, bell peppers, and serrano peppers in the EVOO; add a pinch of salt and pepper to flavor and grill them or sauté them in a skillet for about 5 minutes and set aside.
2 - For the aioli sauce: mix the mayonnaise, red pepper flakes, Thai chili and garlic paste, chives, honey, and little pinch of salt.
3 - Grill or cook the Beyond Meat burgers and the buns.
4 - Pan fry the eggs, sunny side up and sprinkle them with a little salt and pepper.
5 - Assemble Burgers: spread aioli sauce on the toasted buns, add a drizzle of the hot pepper sauce, place a slice of cheese, then the burger, fried egg, and top it with the sautéed onions and peppers.
6 - Serve with lettuce, tomatoes and pickles for toppings on the side. Enjoy with fries or chips!
