Grilled Bombay Paninis

If you ever visit India, I'd highly encourage you to try the paninis there! There's probably like a hundred different types in each laddhi (street cart) or restaurant. Street food is the best in India and there is something about it that is so comforting and satisfying. I absolutely love Indian sandwiches so I had created my own recipe a few years back. I was just craving them one day and decided to try it out and it was definitely a hit in my house. My parents and in my in-laws loved it too. It's one of those recipes that you can change it up however you'd like with different chutneys and veggies. I know in my recipe below I don't have cabbage, but the crunchiness of the cabbage adds great twist to these as well so feel free to try it out.
Grilled Bombay Paninis

Panini Ingredients:
- 1 packet of sliced French or Italian Bread
- 2 tbsp of EVOO
- 1 cup of cilantro garlic chutney (recipe below)
- 2 red potatoes medium round sliced with skin on (rinsed in cold water)
- 2 roma tomatoes round sliced
- 1 red onion round sliced
- 2 mini cucumber round sliced
- 1 bell pepper round sliced
- chat masala to taste
- black salt to taste
- 1 tsp of cumin
- 1 cup of shredded Amul cheese
- butter spread
Chutney Ingredients:
- 5 cloves of garlic
- handful of cilantro
- 2 serrano peppers
- salt to taste
- 2 tsp of lemon juice

Directions
1 - Blend chutney ingredients and set aside
2 - Heat up the EVOO in a non-stick pan over medium heat and add the cumin kernels and let that sizzle for a few minutes.
3 - Throw in the potatoes and sprinkle a little salt; cook them for about 5-7 minutes until they are done. As you take them out of the pan, sprinkle them with a little chat masala and set aside.
4 - Heat up the panini grill, and coat one side of the slice of bread with butter and one side with the chutney and place the butter side down on to the panini grill.
5 - Then start layering the sandwich starting with potato slices and sprinkle the chat masala and black salt on each layer as you go with the ingredients. I usually do potatoes, Amul cheese, onions, peppers, tomatoes, and cucumbers.
6 - Then coat another slice of bread with butter and chutney; place the chutney side down and close the panini grill to grill it. You can do multiple paninis on the grill as many as you can fit. I can usually fit 3-4 paninis at a time on my panini grill.
7 - Grill the paninis for about 5 minutes or so until they are crispy; then remove from the grill and top it off with freshly shredded amul cheese. Enjoy! :)
