Hearty Lentil Soup

One of the most comforting feelings for me is sitting with a bowl full of soup in my hands and enjoying it on a cool rainy day. If you're looking for a quick, hearty, and delicious soup, you're going to love this recipe. It's been rather cold lately so I wanted to post a soup recipe. This soup is quite healthy, yet so tasty; it's just full of nutrition all around. The natural flavors from the veggies and parsley with the lentils make this recipe winning in my book. I love having lentils as the base for this soup because they bind well with the rest of the ingredients. I hope you try it and enjoy!
Hearty Lentil Soup
Ingredients:
- 3/4 cups of soaked brown lentils
- 2 medium carrots (chopped)
- 2 stalks of celery (chopped)
- 1/4 red onion (chopped)
- a handful of curly or Italian parsley (chopped)
- 2 garlic cloves (chopped)
- 1/2 tsp of salt
- 1 chicken boullion cube (optional)
- 4 cups of water
- 1 tsp of cumin seeds

Directions:
1 - Boil water and throw in the soaked lentils and let them cook for about 5 minutes.
2 - Add carrots, celery, red onion, garlic, salt, cumin, bouillon cube, and cook for about 3-4 minutes.
3 - Add parsley and let that cook for a minute.
4 - Turn off the stove and take a hand blender and roughly blend about 1/3 of the soup. Don't puree the entire soup; just enough to thicken the consistency of the soup, yet keeping it chunky. Enjoy!
Note: You can also take a 1/3 of the soup out first and blend it and then throw it back into the rest of it.
