Indian Grilled Chicken Tacos

One of my favorite things to make that it's super easy is grilled chicken tacos! These tacos are pretty easy to do for a weeknight meal. I have made a few different varieties of tacos, but the Indian spiced ones were my favorite! The grilled flavor on the chicken tenders is perfectly zesty and yummy! Try out my tasty easy recipe that will leave you wanting more!


Chicken Marinade


Ingredients:

- 1 packet of chicken tenderloins (rinsed and cleaned)

- 5-7 garlic cloves

- 1 inch piece of fresh ginger

- 1 cup of chopped cilantro

- 2 chicken bouillon cubes

- 1/2 tbsp to 1 tbsp of Shan Chicken Tikka Masala

- 1/2 tbsp of red chili powder/Kashmiri red chili powder

- 2 tsp of dried coriander powder

- 1 tbsp of canola oil or EVOO


Directions

1 - Blend the garlic, ginger and cilantro

2 - Mix the blended mixture with the bouillon cubes, tikka masala, red chili powder and coriander powder and the oil together to form a paste/marinade mix.

3 - Coat the chicken tenders with the marinade and then put them in a ziplock bag overnight or longer if you're going to freeze them for later.

4 - Grill the chicken tenders whole on a grill mat and once they are grilled cut them up into 1 inch cubes and grill them for a few minutes again and set aside.


Note: Do not cook chicken right out of fridge/cold - let it get to room temperature before grilling so that it's juicy.

Tacos Assembly

Ingredients:

- Street taco size corn or flour tortillas

- Amul cheese or mozzarella cheese

- 1 lime cut into wedges

- 1 serrano pepper (minced)

- 1/2 onion (minced)

- 1/2 tsp of salt

- 1 cup of finely chopped cilantro

- 2 grilled serrano peppers (julienned - optional)

- Green & red salsa for topping (optional)





Directions

1 - Mix the minced serrano pepper, onions, cilantro, and salt together along with the lime wedges and set aside for topping.

2 - Warm the tortillas on the grill and feel free to double them up; add cheese on the tortillas and let it melt quickly.

3 - Take tortilla off the grill, add some sauces on the bottom, layer it with the grilled chicken and the onion mixture.

4 - Serve warm with the lime wedges and the grilled serrano peppers.

5 - Optional - top it off with grilled jalapeño sauce or red salsa.
