Mexican Brunch Tostada

Need a Sunday brunch idea?! Let do Sunday Funday by trying out my delicious savory Mexican Brunch Tostadas! Many of my family and friends who have tried these have absolutely loved them. These brunch tostadas are fairly easy to make and very filling as well. I just love the Mexican twist to brunch food since I prefer savory dishes for brunch.

Below is my recipe, and although my recipe is vegetarian, I would say it’s pretty versatile that you can add your own twists to it as well by adding meats, or other veggies and sauces if you would like. You can add bacon, chicken, or veggie substitutes like vegan sausage, soy chorizo, etc. Feel free to experiment like I do! :)

Mexican Brunch Tostada


Ingredients:

- Old El Paso Tostada Shells

- 16 oz can of Old El Paso Vegetarian Refried Pinto Beans or Refried Black Beans

- Old El Paso Taco Sauce

- Eggs (1 per tostada)

- 1/2 tbsp of Old El Paso Taco seasoning

- Diced tomatoes

- Diced onions/scallions

- Thinly round sliced jalapeño or serrano peppers

- Slices of avocado

- Handful of minced cilantro

- 1 tbsp of butter

- EVOO


Cilantro Crema


Ingredients:

- Handful of cilantro

- 4 tbsp of sour cream

- 1 tsp of lemon juice

- 1/2 tsp of salt



Directions

1 - Prepare Cilantro Crema first by blending the cilantro into a paste and then taking it out in a container and adding the sour cream, lemon juice, and salt and mixing it all. Note: You can take it out in a squeeze bottle or a zip lock bag if you like for better spreading/presentation.


2 - In a small sauce pan, melt the butter over medium heat and once it’s melted throw in the seasoning in the butter to flavor it and a paste will form, then add the can of beans and mix it all up and once it’s heated for about 3 minutes set it aside.


3 - Toast the tostada shells according to directions on the box either in a conventional oven or in a toaster oven and set those aside.


4 - In a flat skillet or whichever you prefer, spray or add a little EVOO and prepare some sunny side up eggs over medium heat. While they are cooking sprinkle a pinch of salt, black pepper, and taco seasoning to add a little flavor to them.

Tostada Assembly


1 - Place tostada shell on plate and spread a layer of beans first

2 - Spread a tbsp full of taco sauce on top of the beans

3 - Place a sunny side egg on top of the sauce

4 - Place a couple of slices of avocado

5 - Spread the veggie toppings on top (tomatoes, onions, scallions, peppers and cilantro)

6 - Squeeze a few dollops of the cilantro crema on top and enjoy!

7 - Feel free to add your twist by adding meat substitutes or meats like bacon strips, sausage, etc.
