I'm sure I'm not the only one that ends up having overripe bananas. Sometimes I think my husband purposely lets them overripe just so I'd make banana bread! haha! Although I love banana bread, the recipes I've used just have a lot of butter, which makes them so good, but so unhealthy. So I started to come up with other ways to use up my bananas that are overripe. I usually just peel them and cut them up and freeze them in those individual blender cups, but if you don't have those, I've used a glass container before, too, to store them. My frozen banana nut shake recipe is pretty healthy and the perfect "pick me up" for the afternoon or even for dessert. If you'd like you can thicken up the consistency of these shakes by cutting the milk quantity and make them more of an ice cream texture. The following recipe is for one shake, so adjust your measurements accordingly if you're making more than one at a time.

Frozen Banana Nut Shake

Ingredients

- 1 very ripe banana

- 1/2 cup of milk

- 1 tsp of sugar or honey

- 4-5 unsalted cashew

- 3-4 unsalted almonds

- 1 pinch of ground cardamom (optional)

Directions:

1 - Peel banana and cut it up and freeze it in a blender cup or a regular container for about 2-3 hours at least.

2 - Take out the frozen banana for about 30 mins before making the shake to thaw.

3 - Add milk, sugar, cashews and almonds and blend. Enjoy!
