Pistamisu

I hope you guys love tiramisu because I’ve come up with a #mrssunitcooks version of a misu and I called it Pistamisu. I’m a huge fan of pistachio flavored desserts like macarons, ice cream, or pastries, so if you’re like me, then you’re going to love this recipe!


I‘m not that adventurous when it comes to coming up with my own desserts recipes, but every once in a while I get inspired to try something on my own. This is a recipe that I recently tried for a mother’s day dinner. It was fairly easy and fast to make. We had both of our parents come over and usually for dessert I make my mango pie, or tres leches cake, or we just carry out from local bakeries. But this time, I decided to try out something new and it was definitely a hit; they all loved it! Hope you enjoy my Pistamisu!

 

Pistamisu


Ingredients:

- Jello Pistachio Pudding mix

- 1 packet of lady finger cookies

- 1/2 cup of milk

- 4 oz BelGioioso Mascarpone cheese

- 1/4 cup of heavy whipping cream

- 1/2 tsp of vanilla extract

- 1/3 cup of raspberries and some additional for topping

- Handful of pistachios for topping



Directions

1 - Prepare the pistachio pudding as directed on the box

2 - Using an electric hand mixer, whisk in the mascarpone cheese and heavy whipping cream into the pudding mixture

3 - Whisk some raspberries into the pudding

4 - In a separate bowl mix the vanilla extract and the milk (make sure its wide enough so you can soak the ladyfinger cookies one by one)

5 - In individual cups or a larger glass container start off with a layer of the pudding mixture and then soak each ladyfinger cookie in milk mixture, then do another layer of pudding and continue the same process until everything is used up.

6 - Top the Pistamisu with fresh berries and pistachios

7 - Cover with saran wrap and refrigerate at least 8 hours before serving. Enjoy!
